Steamed chicken with tea melon

Steamed chicken with tea melon.  Chinese recipes. Asian food. Recipes with chicken.

Ingredients:

  • 1/2 chicken, about 1  1/2 pounds
  • 2 ounces cellophane noodles
  • 6 scallions
  • 1/2 cup shredded tea melon
  • 1 teaspoon salt
  • Dash of pepper
  • 1 1/2 tablespoons light soy sauce
  • 1 tablespoon rendered chicken fat or peanut oil
  • 1 teaspoon sesame oil
  • 1/4 cup water
  • 1 tablespoon dry sherry

Preparation:

Chop the chicken into 1-inch chunks.  Soak the noodles in cold water for at least 30 minutes.  Chop the scallions into 1-inch lenghts.

Combine all the ingredients in a heatproof bowl.  Steam over rapidly boiling water for 20 minutes.
